Courgette, Pistachio and Orange Loaf Cake

This pretty loaf cake is packed with flavour and uses courgette as its secret ingredient, making it slightly more healthy for you. The orange glaze really lifts this cake to another level of tastiness.


The ingredients and instructions for Courgette, Pistachio and Orange Loaf Cake are as follows:

INGREDIENTS

Makes 1 Loaf

125ml Pomora olio nuovo plus extra for greasing
2 eggs
100g soft brown sugar
2 tsp vanilla extract
350g coarsely grated courgette
Zest of 1 orange, finely grated
300g wholemeal flour
75g shelled pistachio nuts, roughly chopped
1 tsp baking powder
1 tsp ground cinnamon

For the orange glaze:
60g icing sugar, sifted
Juice and zest of about ½ orange
1 tbsp roughly chopped pistachio nuts

INSTRUCTIONS

1. Preheat the oven to 180ºC. Oil a 1kg loaf pan with olio nuovo and line the base with baking parchment.

2. Beat the eggs, olio nuovo, sugar and vanilla extract then stir in the grated courgette and orange zest.

3. In a separate bowl, combine the flour, pistachio nuts, baking powder and cinnamon. Pour in the egg mixture and mix together.

4. Pour the batter into the prepared pan and bake for 45–50 minutes. Leave to cool in the pan for 10 minutes.

5. For the orange glaze, put the icing sugar in a bowl with the orange zest and mix in enough orange juice to form a runny icing. Pour over the cake, allowing it to drip down the sides, then scatter over the pistachios.
