Penne al'arrabiata

You can't go wrong with an Italian classic like penne al’arrabiata - just use the best tomatoes, garlic, chilli and olive oil you can find. So simple and yet so delicious.

The ingredients and instructions for Penne al'arrabiata are as follows:


130g penne
125g vegetarian mozzarella
400g tinned plum tomatoes
1 tbsp tomato purée
2 garlic cloves
10g Fresh basil
¼ tsp chilli flakes
1 tbsp Pomora olio nuovo


1. Put the penne in a pan of boiling water and cook for 10 mins.

2. While the pasta is cooking, peel and chop the garlic. Put the olive oil in a large frying pan over a low to medium heat and gently sautée the garlic and chilli flakes for 3 mins. 

3. Add the plum tomatoes and tomato purée to the frying pan and cook gently for 5 mins. While it is cooking, use a wooden spoon to gently break up the plum tomatoes.

4. Once the penne is cooked, drain it and add it to the sauce. Stir well to ensure the pasta is coated.

5. Spoon the pasta into bowls, top with torn mozzarella, fresh basil leaves and a good crack of salt and black pepper.
