Sweet Potato and Chilli Soup

This quick and easy soup will both tickle your taste buds and warm your cockles thanks to a generous splash of our chilli-flavoured oil. Comforting and delicious, it's one of our favourite.

The ingredients and instructions for Sweet Potato and Chilli Soup are as follows:


Serves 4

15g butter
1 large brown onion coarsely chopped
3 garlic cloves crushed
1 large pinch chilli flakes plus extra to garnish
750g sweet potato
750ml vegetable stock
Sea salt to taste
Freshly ground black pepper to taste
4 tbsp Pomora chilli-flavoured olive oil to garnish
2 tbsp fresh parsley to garnish


1. Heat butter in a large soup pan and gently saute the onion, garlic and chilli flakes until soft, about eight minutes.

2. Add the sweet potato and vegetable stock and bring to a simmer. Simmer gently for 15 minutes, until the potatoes are softened.

3. Puree until smooth, season to taste and divide between four soup bowls.

4. Garnish with extra chilli flakes and a swirl of chilli-flavoured olive oil to taste.

5. Finish with a sprinkling of fresh parsley.
