Turkish Eggs on Pita

A basic, economical dish that simply tastes so good it could easily become a breakfast fixture.

The ingredients and instructions for Turkish Eggs on Pita are as follows:


Serves 1

2 eggs
1 brown pita bread
3 tbs Greek yogurt
3 pickled chillies, stalks removed
Handful fresh mint, chopped
Handful of fresh dill, chopped
½ clove of garlic, grated
¼ tsp smoked paprika
Pinch of chilli flakes
2 tsp Pomora extra virgin olive oil


1. Put the yoghurt in a small bowl, add the grated garlic, season with salt and stir well.

2. Heat half the olive oil in a frying pan over a medium heat then crack in the eggs and fry until you have set eggs and runny yolks.

3. Meanwhile, toast the pita and butterfly it open on a plate using a knife.

4. Add the yoghurt mixture to the centre of the bread and spread it out using the back of a spoon.

5. Top with the fried eggs and sprinkle over the chopped herbs, paprika, chilli flakes, pickled chillis and remaining olive oil.
